perhaps this already exists and I haven't found it?
There is an Android app that allows one to WiFi remote control iTunes/Music, locally.  It's called Retune.

If one is running iTunes as their music "server" locally on a Mac, you can remote control within the WiFi range.

It is fairly simple in that allows previous/next song, mute and volume control, within iTunes.  It allows you to see the library, history and up next.

Since Apple f'kd up iTunes with the "update" to Music, many have dropped it.  I only use Emby for music playback.

Since iTunes/Music is part of the OS and Emby is a 3rd party, perhaps this isn't possible?

But it sure would be handy when playing music on the home system to have a Android remote with these features.

IE: dinner in and hard rock comes on and I'd like to skip to the next tune without getting up to go to the server Mac.

You can remote control any emby client from pretty much any other emby client.

Click on the cast icon in the top right, then select a client to control:
