Hello
I want to buy the premium version, but I would like to make sure that it is possible to add and link a domain to my IP
With an explanation of how to connect the domain, if possible

Getting a domain and assigning your IP address to it is nothing to do with Emby.  It is done using a Domain Registry such as GoDaddy, Gandi, or many others.  If your IP address isn't constant, you'll need a Dynamic DNS service (DDNS) to keep the domain name in line with the current address.  Some DDNS services provide a domain name (as a subdomain of theirs) as part of the service.

Accessing your Emby server from outside your network requires some settings up, though - see this article.

If you want to encrypt access to the server using SSL and HTTPS, you'll need to have a domain name for the certificate.  You can add the certificate directly to Emby, or (preferably) using a reverse proxy (such as Caddy, nginx, etc) to pass data between Emby and the Internet.  Here is an initial summary.
