To cut a long story short:

1. Emby server does not support HLS using fMP4 container, so MKV HEVC streaming using native player is not possible (full transcode is required)

2. MPV does not support HDR passthrough

Time passes and problems remain ☹️

Does this mean Emby doesn't play any HDR - and is this issue on AppleTV only? Or is it affecting other players like Roku, Shield, etc?

Emby is fine on every other device, just the AppleTV, a device that makes it difficult for users to play their own content, has a "bad" experience.  If you want HDR/DolbyVision move to Android or Roku.

It's hard to understand why oranges and purples have HLS fMP4, but green ones don't.

exactly this. too many people just lazily go, "well its Apple innit", rather than spending a few seconds to inform themselves properly
