Sounds like a plan. Good look and don't get discouraged.

 

Also keep in mind that you could change umasks on a per user basis.

If you were to create a new user just for emby, you could set it's umask e.g. to 002. Put all other users that should have access to the files in the group emby and you are done.

 

The umask is not really a security feature, since every user can change their own. It's more about the convenience of not having to adjust access rights for every newly created file manually.

As to what system-wide umask makes sense, there is no "right" or "wrong". Some distros ship with a global umask of 002. Ubuntu assigns a umask of 022 to root and 002 to all regular users (above UID 1000 I think). Etc.

At the end of the day it all depends on your use case.
