You have no Media Info so Emby has not probed the media or ffmpeg is failing on your system.  Can you Refresh the metadata and post the server log.

Should have media info similar to this

I have installed ffmpeg as this tutorial describes: https://www.wikihow.com/Install-FFmpeg-on-Windows

I then restarted my computer and scanned all libraries. Nothing has changed. Is there anything else I need to do to set up ffmpeg?

Here is the log file: https://drive.google.com/open?id=1knwSN3X1D4BtNLzR4VLPXP4OtpG8oOaT

You don't need to install ffmpeg as it is a part of Emby's installation.  But it is failing on your system.  Luke will have comment on the error though.

System.FormatException: Input string was not in a correct format.

What is your windows locate setting configured to?

I have had a bit of trouble with setting this, as the the windows 10 settings app "Region and language" page doesn't work. Someone describes the issue here.

Installed keyboard languages are nb (Norwegian Bokmål) and en-US. nb is enabled. Installed display languages are en-US and nb-NO. en-US is enabled.

Ok well the error in the log is language related and resolved for the next release. It will be up on the beta channel in the next day or so. Thanks.

I can't get subtitles to work either on my Emby Server install on Win 10;

Plex is showing subtitles for the same movies perfectly; have tried everything

I know in Emby to get them to display both on a Roku Ultra and on an

ATV; for now I'm using Emby to record and Plex to playback..

Sorry..no subtitles..must be my user error or

ignorance otherwise lots of people would be

screaming about this..in the Emby of a year or so ago I

had the opportunity to select a subtitle from a menu..now

that option seems gone..evidently I don't understand how

the newer Emby links subtitles to broadcast TV or to

movies that one records on networks like AMC or TCM..

I'm just baffled as PLex seems to have the subtitles down cold

from Emby recordings..

I'm running the beta server and I did re-scans..no

subtitles so far but after a convert op is finished I'll do

a server restart..tried video files on both Roku and ATV4

w/o success..I'm baffled on this..

Looks like this log is for the hrs from midnight to 4:18 am this morning;

at 4 am I was watching some live tv broadcast on my Macbook pro;

do you want me to set up an experiment watching a TCM movie

that I watch at a certain time?  The source of TCM is SD Premium TV

which is an IPTV source; the local channels are from Cox Cable also

recorded by Emby; both sources are being recorded by Emby only..

no SD Channels or Plex recordings going on; I want to have a single

recording engine and I hope it can be Emby..I've yet to see any

subtitle when viewed by an Emby client: Win 10 MAC ATV4 or ROKU

Ok i see what happened here is you jumped into @@condor213's topic and this whole time I've been responding to you based on his issue reports. This is why we always advise on starting your own topic.

But since we are already here, for the transcode log you posted above, what kind of subtitles were supposed to be playing?

Lol, I understand how him suddenly jumping into this thread could confuse things :) I marked the thread as answered to try and clarify. Sorry for the confusion.
