And you use URL https://app.emby.media/ , any reason why not to show the "real" URL?

You are not connecting with that method, you chose app.emby.media not your DDNS_NAME. 

So if you have a DDNS_NAME then why are you using app.emby.media?

Can you please clarify.

User gets on a TV screen PIN and validates it via emby.media/pin and?

Does a use have to click on the Next button or Emby on a TV automatically refreshes and connects to a server?

It isn't going to automatically connect to a server because there could be more than one.  It will present you with a list to choose from.
