noob question: why transcode?

Why not pre-process your media files, so you never have to transcode?  Just make a few versions of each file up front, and be done with it.  No expensive NAS required.

I'm new to all this streaming stuff, so bare with me, but I plan on ripping my movies, will encode in standard MP4 H.264 1080P for streaming to my tv's, and maybe make a 720P version, for future stuff (personally I think it's dumb to watch a movie on your phone, that's what tv's are for).  I tried Plex for a bit, and it automatically made 720P versions of my 1080P files.  Seems like a good idea to me.

Let's face it, people are creatures of habit, we tend to watch the same stuff over and over, in the same way.  Shouldn't be too hard to figure out what versions of files you need, make them once, and be done with it.  Why waste cpu cycles, electricity and heat created needlessly, when a little extra effort up front saves from doing all that.

Sorry if this has been beaten to death over the years, but it's brand new to me, so any helpful feedback is greatly appreciated!

You have that option if you want to have multiple version of your media.  But I personally just let the server do what it needs to do to deliver the media.  To a point there is not a perfect conversion as every remote internet connection will be different so the odds of exceeding bandwidth are almost always there.
