I'd not use windows backup unless it runs when Emby is shutdown.  The trick to getting good database backups is to first shutdown Emby Server.

Fortunately you can shutdown and make a copy of those DBs in under a minute and then get the system back online.

A full backup with any backup utility will pretty much work for everything else however so if you wanted a backup of meta-data and/or everything but the DBs that would work.  Just backup the DBs with Emby down and not open.
