Headless Emby server

Hi all, been using Emby for years on my Synology 1815+ but wanting to install Emby Server on an old i5 470um, basically it's an old tablet that has long past it's useby date.

My idea is just to use this board for Emby only for DLNA and only for the a few shows on a couple of DLNA enabled TV's at our second home.  I'm just wondering what version of Linux would be best to use to set this up, wanting something lightwieght and easy to configure/install as I'm no expert on linux.  I'm obivously wanting to use this as a headless box and access the Emby interface via the web interface as when needed. Just hoping someone can point me in the right direction.

PS We do access emby from our NAS when we are at our second home but wanting a basic stripped down version for a few shows that we can watch on TV's without any additional devices, ie only with TV with DLNA built in.

You do realize you will be limited to streaming and performance based upon your wireless card.. The processor may be fine and RAM.. but unless you can connect by LAN.. it may not be great...

Yeah I realise I may be limiting myself on bandwidth from a wifi card, but can always add a USB network card. We are only planning on using it for shows like The Simpsons, Family Guy, American Dad etc... so no large amount network traffic will be used TBH and only one at a time.
