Split tunneling Emby server on Mint?

So over the past few weeks my server has not been able to retrieve metadata until I disable my vpn. I'm guessing the metadata providers have blocked the IP or perhaps there's some captcha involved, either way I'd like to resolve this and it seems like the simplest solution would be to run Emby-server in a split tunnel. How can I achieve this on Linux Mint? I'm using Mullvad which provides a GUI to select a script/program that you want to run in the tunnel but I'm not sure what it is I need to choose.

Hi, yes I'm sure it's possible although I've never tried to do this on Mint.
