One thumb vs another?

I have MKV files with an imbeded thumb and Emby seems to be showing it.  I have all the metadata extractors turned off as my content isn't movies or tv shows it's my stuff.  That said, I have some of my videos that the thumb doesn't embed.  Is there a way to use the embeded thumb which Emby seems to be using by default, but if it doesn't have one create one from the file?

Hi, we already do that but it sounds like you may have turned it off.

Or one of them?  Also will it replace the thumbnail for any video that has an embeded one?
