I thought about picking one up and making a server out of it, but it has barely any room for expansion

You could always get a Mini-PCIE to 2 port sata card

I was just thinking about it to save on power from leaving my main hog on all the time.

 

I run my own jitsi meet, Emby, and speed test servers from my fiber. Plus want to get rid of my Asus RT-AC88U router.

The specs say "4 internal sata".  On a photo of the MB I can see two ordinary sata ports and one M2 socket for an SSD.  There is also an M2 socket for a wifi board.

I would even waste my time and Linus did a video on it you be better with a ASRock J5005-ITX

Assuming you can find one.  It looks like it was designed with a special application in mind.

 

I also watched the Linus video on this.

 

I'm not sure it's any better than many other options out there. Options that would be much easier to acquire and support.
