Will Emby server run on Windows Home Server 2011?

Yes, I have no issues.  You will run into IE ESC issues so you will have to disable to set Emby up.

Happy2Play, one more question please. Should I re-enable IE ESC once Emby is installed?

Depends on if you use IE on your server for any access.  If you install another browser such as FF or Chrome you don't have to worry about this setting at all.
