AC3 (Dolby Digital) is more widely supported, otherwise that's pretty generic.

You will need to read the manual on your TV to find what formats and bitrates it supports.  As for your MiBox, it will play everything directly through Kodi.  Your iPad is an Ifailure when it comes to media compatibility, and everything you rip will be transcoded.  It's more than probable your TV will not understand the DTS-HDMA tracks on the remuxes and thus Emby will transcode the audio.  So I'd suggest playing them directly through your MiBox, and not through the TV.

There usually is an AC3 audio sub-stream in BDs. I will add it when remuxing. Thanks for the info. I can change the audio stream in Emby right?

Yes Emby has audio track selection.

This is not emby-related but with that bitrate, should I connect the players via Ethernet? I feel like it’s gonna lag with Wifi... obviously the server is on ethernet

Yes if gigabit end to end otherwise AC Wifi will outperform 100mps Fast Ethernet.
