Currently Emby defaults to the boot drive for transcoding. I use a Solid State boot drive. Is it faster and better for Emby to transcode to a Solid State Drive or does it even matter if I use a 5400RPM storage drive? I'm wondering if doing this on an SSD will shorten the life of the drive or if it really doesn't matter at all. For that matter, Emby writes its cache and metadata to the SSD too. Should I move these to another drive or not..

You can move the transcode folder to whatever drive you want, it doesn't matter as the speed of the drive will not impact the speed of the transcode or the speed of the media playback/upload, as it can only transcode as fast as your server will allow it to.  Doing it on an SSD can in fact shorten it's lifespan.  As for your cache and metadata, in my instance I have found it better to use files2folder to keep the posters and such in the directories of the movies, (someone posted about it on reddit) and that way I don't have 1000+ files in one directory.  Each movie has it's own directory and in that directory it has the picture files needed.  The other metadata, actors and such still gets stored on the SSD as that information doesn't change often and you want that information quickly accessible.
