If you download the PORTABLE version of the Emby server, you can install where you like.

 

You'll have to change the default ports though, or they'll both be trying to run against 8096.

 

There are no guides, just a case of doing it.

 

I used to have a Stable and a Beta Emby server on the same PC, when I was testing the new .net core version of the server.
