Emby Keeping Transcoded Copy

Greetings,  I haven't used Emby for about a year now as we were relocating out of state.  Today I was finally able to get time to build a new machine and setup Emby server.  I noticed that after partially watching a movie it stayed visible in the "Active Devices" with the transcoding progress completed.  Once I continued watching the movie, the server appears to not have been actively transcoding, yet continually streaming the already transcoded file. 

 

I do not remember this behavior on my previous server,  Is this a new feature?  If so, what dictates when or for how long the transcoded copy is kept?
