I ended up having to completely purge emby-server from my server. Once I did that and rebooted, I reinstalled the dkpg, installed the backup plugin and restored my previous config. Full library scan in now taking place and it hasn't crashed.

Follow Luke's advice and use the official instructions which will lead you to the download and the new and much more simplified instructions ( as compared to the old instructions using mono )
