All the adults channels keep showing when I not watching them and the kids watch emby as well

How are you expecting Emby Server to hide these? Have you set a parental rating on the channels?

Hi.  Please see our Wiki on Parental Controls.

 

You can give the channels a rating and then assign a maximum rating for your users.
