Transcoding woes. iPads and Web...

I'm not sure we've ever had a single transcode work properly all the way through a movie via ipad or web.  The majority of our watching comes via nVidia shield and it direct plays the files.  Over the past week I decided to convert all our kids' movies into an mp4 format so they can direct play/stream to our ipads and web browsers (mostly Chrome and Edge).  I'm still in the process of transcoding movies (almost 100 so far) and the kids have had ZERO problems direct streaming the videos.  

 

Is there a problem with the transcoding engine with Emby?  I HATE to say it, but we had zero issues with Plex.  I really find having to permenantly transcode our higher quality mkv files a waste and not really the correct way to do things, but rather a band-aide approach.

 

I know you want log files - but every time I provide those, it either starts working again for a few days, or we have never come to a full resolve.  I guess I just wanted to know if there were any open ended discussions on how transcoding works with Emby?  Is there a method to having it work better over others?  I see a throttling option but wasn't sure what it does exactly.
