Hi, what log is this?

Just the latest in my logs folder. Is there a more appropriate one I should attach?

There is no restart or shutdown process in that log.

Ah, thought that might be the case, sorry about that guys!

Where would I find the log that does contain those?

The same place you got that log.  Its just that log doesn't show your issue.  But there are dozens of post on this topic.  Some machines don't release the server process fast enough during the restart process and is unable to recover.  I have had to wait up to 5 minutes for the process to die.  But this issues has improved over time.

Just had this problem as well on Windows 7 Pro x64. Updating Emby, then Java , then windows, then restarting the system has worked for me so far.

My HTPC stays on 24/7 (unless I'm doing maintenance) and during the day Emby just closed on it's own. I started Emby again and saw there was an update and went ahead and installed it then restarted Emby. It stayed opened for approx 30-45 seconds and closed again on it's own. Started it again....same thing. At this point I also realized that I had a Java update notice as well and so I went ahead and installed that and windows updates (only had 2) then I restarted the system. Emby hasn't crashed yet.
