Best way to organize for Elearning Courses

Hi, I'd love to keep track of my elearning courses and transcode content for learning on the go. What's the best content library type to handle Video (with offline transcoding), Audio (with offline transcoding), Images (Offline cachingloaded using native apps or emby app) and documents (Offline caching, loaded using native apps)

You never got a response to this, but interested in seeing how you went about this.   This is something I would be interested in as well.   I was thinking that I would set up the videos much like a TV series,  that way you know where you left off.

My suggestion would be to just setup a home videos library. Then you can use any folder structure that you want.
