In my "ImagesByName" folder I have other folders, example: 00,cf,ff etc. Also these:

Genre, Metadata, People, Studio, Views, Year

 

Within the "Metadata" Folder there are these folders: Artists, Channels, Library, People, Views.

 

My question is which ones are now redundant and can be deleted because I seem to have duplicate folders like the "People" folder.

ImagesByName should be considered redundant. It was replaced with the Metadata folder months, maybe years, ago.

The location of my Metadata folder is desktop/MyPictures/Imagesbyname/Metadata. So everything outside of the "Metadata" can be deleted?, ie "People", "studio", "Views", "00", "ff" etc.

 

There is also a Metadata folder in the following location: C/Username/SamW/Appdata/Roaming/MediaBrowser-Server/data. Should this be left as is or is it ok to delete?.

I would check to see what the Dashboard shows as your metadata path.  Dashboard-Expand the Paths menu   desktop/MyPictures/Imagesbyname/Metadata?

 

There have been lots of changes to IBN in the past and it sounds like you have a mixture of the changes.

Since you are on a OLD installation I am not 100% on the migration changes that could be in your system.xml that may still be affecting your situation.
