Can anyone point me to where on the Synology it stores configuration files and images for Emby?

What Synology platform are you using?

 

If it's an Intel based system (https://github.com/MediaBrowser/Wiki/wiki/Synology-:-Summary-of-Models-by-Processor), are you using the Emby package?

I'm using RS18016xs+ (Intel) and yes I am using the Emby package and selected to install on volume1.

Picked up on PM, no issue with discussing the internal workings, but can cause issues on the public forums if the context or implications of directly manipulting your system isn't fully understood.
