Adding TV show that will likely have no metadata. Best way to add?

I have these dvds and I am creating mkv files for them:

I am wondering what is the best way to save the file structure, and how to name each file, so that when I add it to the Emby TV library it can read what I input. I anticipate there is no metadata out there for this show. Any help would be appreciated.

I think the usual advise for exercise videos is to add then as a "home videos" library so that they will not attempt to be identified online and you can add your own metadata

You can also just use a regular tv library and then lock the metadata.
