Did new Windows 8.1 install a few weeks back and noticed after installing emby server i do not get an option for View Styles under the home screen settings at all. i unistalled emby server and choose the delete all trace or whatever that option was and re-installed but still no "view Styles" option.

any recommendations?

What exactly are you trying to accomplish.  Many of the configuration settings have evolved and some are no longer necessary.

ok.  when i enable that and then click on the folder though it doesn't show all the subfolders like it use to. it just has everything lumped together

what do you mean lumped together? it is supposed to show sub-folders.

i click on the folder icon and then movies.  it shows all the movie covers together.  no option to select the subfolders they are actually stored in.

i have added only library at this time Movies with several subdirectories broken down by Genre

i can click on the Folders  or i can click on Movies.  however both just have the same type of enhanced view from emby.  the folders view does not appear to be showing the true folder structure anymore

any other suggestions?

I believe if you want it to completely respect only the physical structure you may have to change the library type to Unset/Mixed.  I strongly suggest you try to see if you can make the more dynamic browsing work for you though since, ultimately, it will be much more powerful and feature-rich.
