I just installed emby on my HTPC. However it looks like ffmpeg is using the majority of my CPU and causing my other functions to slow down and become unresponsive.

This server is physically not capable of transcoding so I have disabled it wherever I can find a setting, but ffmpeg still sucks my CPU dry. I have had to go into Task manager and set ffmpeg to the lowest priority so it wont interfere with my other functions.

Can someone please tell me how to stop ffmepg from using all the CPU?

I know my client is fully capable of playing my videos because I was previously using Kodi. Now I am unable to watch anything because ffmpeg is draining my machine of all resources.

ok, there isn't any playback activity here that is running ffmpeg so it seems those ffmpeg processes are associated with image extraction. You can disable those under metadata settings.
 

as an unrelated aside, you've got saving metadata to media folders turned on, but you've got something going on that is preventing the emby server process from saving nfo files, which is filling the log with errors

	Access to the path '\\HOME-SERVER\DVD\Batman\BATMAN_BEGINS\BATMAN_BEGINS.nfo' is denied.
	System.UnauthorizedAccessException
