The packages are being updated, to address some issues. You probably just hit the repos at a weird time. You should also probably do an apt-get update first. I was on the same version as you (3.0.5785.0) and sudo apt-get dist-upgrade (after doing a sudo apt-get update) would not work for the last couple of releases. I ran the command you provided "sudo apt-get install -f emby-server=3.0.5818," and it forced the update and the server to the most recent release.
