Why is there five gigs in my encoded-media folder?

Specifically,

C:\Users\Multimedia\AppData\Roaming\MediaBrowser-Server\cache\encoded-media

Is it safe to delete these files?

The server should be deleting those after playback completes. It is safe to delete them yourself

Great, just freed up 5 Gigs on my SSD that were needed.  Any idea why it's not deleting them automatically?

not without more information, there are too many variables to consider. In my own encoded media all I see is a few songs. Videos have all been deleted.

To give Luke an idea what's going on, you should play something then after it stops... wait 60 seconds and then provide the server log. Also knowing what clients your playing back on when the files aren't deleted would provide more insight.
