Audiobook Metadata being forced to a specific item

I set up an Audio Book library and enabled Open Library. I see an audiobook I have was matched, but it's slightly off and I want to change it.

Even if I choose 'Remove Identification', it does not remove any information from the item.
I have also tried to 'Identify' and choose something completely different to see if it changes the item. It only updated the description section.

I am only using Open Library as my metadata provider.
My test is on a single .m4b file.
I've also tried deleting the .nfo file that was created by Emby.

It feels like it has something to do with how the individual track is being identified, within the audiobook itself.
However I can't 'identify' a track, it seems to be auto populating based on the parent audiobook.

Thanks for any tips on how to manage this.
