I have been using emby for I think 6 years and pay monthly on time each month and now came across something odd. First I will tell you my setup, its a pc tower running 128gigs of ram and plenty cool I have one big fan over it have had no issues for years. I have 19 hard drives 8 internal drives the other 11 are external and everything has ran perfect for years. I am a news group user and try to keep everything neat and tidy when it comes to copying every complete series over to a directory that is complete. I have 23 people using my emby and have been the same for years now without any issues. I have on each drive 2 folders, movies & series that's it except for 3 hard drives that I use for ISO files and 3D files for my meta quest 3. The ISO files I use an app on my meta quest 3 to watch and the 3D files I use emby to watch on my quest 3 and it has worked great.

Strange part is I ordered another hard drive from amazon 26 TB as usual like before only this time strange things started to take place like mouse acting like it's too far from the host usb and then the keyboard acting like the batteries are dying but were not.

Then I noticed strange things with my pc logos like this.

It looks more like a Windows issue than Emby. As you said it started after adding a new drive it may be a power issue as that many drives take a fair amount of power. If you can powerdown a few drives it might help diagnose the issue. If you shut down Emby, Sonarr and Radarr they won't notice that some files are tempoarilly unavailable so shouldn't muck things up.

That is a primary reason why I use nothing but powered UBS drives. If the drives are internal and there are power issues then you, probably, have an excessively weak power supply or the drive itself is defective. 
Back when I built PCs I always used as strong a power supply as possible.
