EMBY scan recognizes new media files, but won't play them

Been using EMBY for over a decade, and have normally not had much issue with it, but woke up today and have spent the morning frustrated and bewildered.

1) first I noticed that the subtitles suddenly were not even showing up as an option for the new files i imported today - whether it be manually downloaded .srt, or embedded .ass, they don't even appear as an option
2) then I found that every single one of the new files give the response "Playback Error - No compatible streams are currently available. Please try again later or contact your system administrator for details". I've been all of these msg boards and can't find an answer (i'm a graphic designer, I have a fair knowledge of tech stuff, but not stellar)
3) the files show up in emby just fine, everything looks normal, except they won't play or show subtitle options
4) I have no idea what changed today from yesterday, and as far as I know: nothing has. I did transport my media to a new HDD about a month ago, but everything has worked swimmingly before and after then, until now.

Please help!

* all of the files from before today play normally and load the subtitles options and everything. emby is still working perfectly in every way, except when it comes to the new files
* all of the files and subtitles work just fine on the pc in MPC
* the files will not stream through my pc browser (firefox), nor through my RokuTV, but they do oddly stream through the emby app on my android phone (though they still do not list a subtitle option)
* i've done all the restarting/rebooting, scanning libraries, refreshing metadata, etc I can find, and gotten zero results  
* running on PC win10. everything up to date. files are on external hdd, as they always have been
* i'm unfamiliar with how to debug/log this when asking for help, so i could use that info as well

thank you in advance times a million! i'm in chemotherapy so i use this program A LOT to get through!

Hey up, see here:

Most importantly: post server and ffmpeg log(s), if written.

As an experiement, I moved "wind river" from my 'incoming' folder to the main 'movie' folder list. it was downloaded weeks ago, and worked fine in the 'incoming' folder, but after moving it to the 'movie', it has suffered the same fate as the new files. it should be there in the logs, if tracking it's movement helps with diagnosis at all.

Yes. 

You apparently have issues with ffmpeg installation, which is integral part of Emby server (without it items can neither be probed nor played):

The specified executable is not a valid application for this OS platform

You could try downloading server from download page and install on top of your existing installation. Do tell us the results.
