Bizarre MKlink behavior in new Emby build

Yes, I do. I just dont understand why no matter what I do Emby won't stop updating. Literally installed and reinstalled five times now, I go through setup pages and then immediately go to general settings and untoggle the auto-update, but it's already updated. There's no time between server setup screens and the update for me to untoggle auto-update. I'm trying to use 4.8.1.1 because everything was fine with that version. Is there an older version that doesn't auto-update before you can deselect the option, is there a way to disable it before setup?

Turned off my internet connection and went through the setup process again, it's not immediately saying 'please restart server to apply updates' so I'm hoping this has solved the problem.

I have used this for many years (non-Emby related) and it has never failed me.
