How to update Emby Server in a docker container ?

I lost almost all of my metadata doing this? For some reason it decided to keep some of it, like only two of my collections survived, one of them with custom artwork so that makes me scratch my head a little harder. Any idea what I might have done wrong? I just brought the container down, pulled a new image, and turned it back on. I didn't delete or clear the container, maybe that was my error?

Sorry I had a typo in my container, specifically for the metadata folder mount. So I'm not really sure where the metadata was going, or why only some of the custom artwork worked. Perhaps it was artwork that I added before, or maybe after, I migrated to a docker setup from "bare metal." I'm sort of past the point where I could troubleshoot it I think, but the root of the problem was a typo and it's sorted out now.
