How do I restore the checkmark so that all the ones I've seen go away???

You want to remove the "played" markers?

If you click a green checkmark it gets unset - at the episode, season, or series level. 

Unfortunately, if you do a multiselect you can mark as played, but not as unplayed; the same at the library level.

Oh, I hope this will be an option in the future. Can you reset your user so they will appear again?

Those checkmarks are used to indicate if you watched a movie, show or episode already.

Are you saying you don't want to keep track of what you've watched before?

I would love to be able to reset it because I often see the same thing.

Personally I cannot for the life of me imagine why you would want to remove an arbitrary checkmark or watch the same media over and over and how that would effect it. If you want to watch the same thing; just watch it directly or create a playlist for it.

Just select Mark as Played on the movie/show and it will get the checkmark back.
