Looking for new p c build server tips

I'm hoping that I receive my PC case from u p s today and I should have my server built tonight.I'm looking for tips for a new server build from the community. One of the things i'm wondering, should I take the latest beta or keep the stable release? I used to have remote access with emby until I replace my cable with fiber and now I have no access. And I'm still wondering what's the best practice? Do a static IP for an extra 10 or go with tailscale? 

Any tips from anyone is appreciated.Thanks guys.

@Lukedo i need to do.anything once I setup emby on my new server? Meaning the license key? Im not using 2 servers. I'm replacing the old with the new.
