How much data does this soak up from a phone as a hotspot ? Am I just better off updating emby in my driveway before leaving the yard using my wifi ?

I originally started using a notebook with a 2.5" HDD as I had used it often in the car with no issues, but when mounted/strapped down I crashed the first of 3 drives the 2nd day it was installed going over a speed bump rather slow.  Using SSD drives I've had media servers in my cars/trucks, sail boats & RVs and never had a drive problem.

I'd image the "shockwaves" from 2 15" subs mounted close to spinning drives would take their toll rather quickly.

I haven't used spinning disks in anything portable in at least 5 years so I don't know if 2.5" spinning notebook drives made these days would be any better but, if possible, just avoid spinning disks.
