Does Emby Automatically Update NFO files?

I know Kodi does not; but applications like Tiny Media Manager need the NFO files to be updated with the WatchedStatus or PlayCount in order to update it's own database.

So does Emby as a matter of practice as you watch a media file update the NFO file's watched status? Does it just update the NFO file or completely overwrite it with its own propriety syntax?

Or is it just like Kodi, read once and done?

Hi, out of the box, no, but you can go into nfo plugin settings and configure this based on a user of your choice. Please note it comes with a small performance penalty, and also Emby only writes the data to the nfo. It does not read it.

Whenever Emby saves the nfo, the whole thing gets overwritten, however, if the nfo contains any nodes that are not used by Emby, then those will be preserved and not lost.

I understand metadata saver in the library needs to be turned on, but is that the plugin itself? I've scanned for an actual nfo plugin and am coming up short.

You need to look at your library settings.

So the plugin is that setting within Emby; not a third party add-on like for example the Statistics add-on?

Correct, it is built-in.

Yes it is a plugin like Statistics but some settings fall within library configuration options not within plugin configuration.
