i understand the way to name is like below

The only thing from those file names that really matters is the "SxxExx" as that identifies the particular season and episode.  The location under the "Anne with an E" identifies the series.

Then, all other information will come from the metadata providers configured for the library.

if you want to edit this, you can use the Metadata Manager to do so.

i've worked it out i just create a folder for that episode then create the sube folders interview, extras etc
