Hi. Exactly where?

You can already filter any library by favorites and sort however you want.

I will guess global favorites as the category rows are only alphabetical.  But each category/type has sort options.

But will assume a client/display variable on header links.

Linked view of category/type.

Sorry if I wasn't clear, I'm running emby on my Nvidia shield pro. And on the home page I have a favourites tab that when selected has two sub categories (favourite movies) and (favourite shows) these are in alphabetical order by default and have no sort options available that I can find. I would personally prefer to see the latest favourite added over the current alphabetical order.

My home screen looks different to this, I can't highlight the favourite movies like you have done above. I think it might be a different app version? I'm on "2.1.21g Registered"

Yes the TV app is a little different.  And will be suggest to try the "Emby for Android" app not "Emby for Android TV".

But yes there are no options on the global favorites view only via there specific category views.
