It generated 3 files which I included, and I also included my server log. Edit: I only receive the error when playing via browser. Edge and Brave. The files play fine if I use Emby Theater on my desktop (nothing plays correctly via Emby Theater on my laptop, but that's a whole other issue). As it suggest Emby known media info says one thing but files when played say another. 10:05:40.445 Stream map '0:3' matches no streams. Had another topic on this where user was using a program to strip subs but Emby never way the update and could not play the files with similar error. So if you Refresh metadata on file does it play? Or maybe library scan? If that is the case you will need to "touch" every file that gets edited to ensure has new modification date so Emby can reprobe media info to update the database. Devs or even the plugin dev would have to comment further on why Emby many not be seeing the file change after subs are removed. I would think if RTM did not see the change the next library scan should. But your issue is different than OP even though it is the same error.
