Emby Not Reading Embeded Metadata

I have been using iTunes till now with family sharing to my apple TV and religiously encode and tag all the info I want. I'm trying emby as a replacement for the AppleTV app which went from OK to useless a while back. I've been downgrading for years now but so hard still to do and the option to disable auto updates on the old apple TV OS doesn't work. It just upgrades whenever it feels like it giving a useless media server interface. No nice scroll-able list of programs and then a list of episodes. No, one has to manually scroll through all items in a genre or search manually typing in the letters as Siri always directs to the Apple Store . I just want a nice user friendly Media server to stream from my win server to Apple TV

Tried Plex for a while but it just always gets all the meta data wrong and often just can't even get a file to show as the metadata loading is wrong or failing.Got too fed up with it. I really don't want anything else to choose my metadata. I just want it to read what I have already. That is static correct and doesn't need changing and will always be correct. BUT I cannot manage to get Emby to read any of it. I have disabled all the metatdata readers after recreating my library and I now have no metadata showing. Surely it must be able to read standard embedded content that works for iTunes and Apple devices.

Any clues anyone? ITunes loads it all perfectly.

Also, I have all my folders set - I did them according to PLEX a while back but for some reason, Emby can't read subfolders of TV shows. I have a top level folder for all the current ones and a subfolder called "_Complete" for all the ended ones. Makes it easy to see what I need to find latest versions of etc. I'd rather not restructure until I know Emby is worth switching to so it seems my options are to add each subfolder as a separate folder or to split old and current into two folders which means removing all from iTunes and reloading and thus loosing all my played history. Any way around this?
