I'm testing out the Live TV in Emby.

Running Emby on unRAID with access to two HDHomerun Quatro boxes; 8 tuners.

Everything runs great except starting a channel or selecting other channels is slow. Slow in comparison to another service that I run on the server for Live TV.

I have seen something about "Direct Play" setting? Can someone tell me where this setting is?

Any other help appreciated.

It's an in app setting, dependent of the app. If you do however have that as an option and set it, you lose the ability to seek (and I believe even pause). So keep that in mind. It's fairly useless for most of us that want the usual DVR features when playing a TV stream.
