Using the naming convention https://emby.media/support/articles/TV-Naming.html#multi-version-episodes I can get them categorized by versions in the drop-down, but if I want to pick a specific version (language) to auto-play, or shuffle, I don't see a way to do this. This would be a nice feature to avoid needing to categorize by version, and then also create playlists.

It may be possible to remux them, but the times not being the exact same would make that a very difficult task. Out of curiosity, if I did have them as different languages is Emby somehow able to pre-set the language of the next show according to the language selected for the current show being watched?

In Emby Server, versions don't have languages assigned. If they were multiple audio tracks in a single video file, then yes, it could select the audio track based on your preferences and/or previous selections.

I collect as many shows as I can in English and Mandarin to help my son be bilingual. The nature of this is that they are different video files, and not separate audio tracks. Depending on the day, I like to pick which language I use for shows that I put on shuffle for him to watch. 1
