How does Emby handle multiple formats of same video.

I have the same video in 4K and 1080p format. I know I can put both formats in the same folder and it will show a drop down of format to choose.

Does the drop down always default to the same format regardless if local or remote?

That depends on the client app, Emby will default to the version it deems will most efficiently play, so you might see different version being picked even inside same LAN, depending on device.
