How can I remove cast and crew for all media on my server ? there is a lot of movies on my server that have blanks so I would like to remove them all if I can thanks.

Try adding the following code to the Custom CSS in Server Settings:

/* HIDE CAST & CREW SECTION */
.peopleSection {
    display: none;
}

It should work for both Movies and TV Series when using the web app.

Yes for the web client you can uses css.  But to your question there is no way to selectively choose what metadata is gotten or not.

If you write nfo files with media you would need to lock the people field and remove that people element from every nfo file.
