Switching to NFO files for my movie database

I have problems understanding how this functions and what will actually happen if you change those options. 
I have a pretty well sorted library by now with every item having custom metadata, genres, tags and posters basically. 
I always have mounted my NAS read-only into emby. 
So it puts the metadata and images seperately into a folder on the emby-system. 
If i mount my NAS (one-time) as read-write and switch to "save metadata into folder" will then a process start that takes all the custom (and locked) metadata and naming schemes and tags so on, put it into a .nfo and put it into the folder? Without any new changes? That would be the very best case. 
And what happens with custom posters? Will they be taken out of the metadata-folder and put into the according movie-folders as poster.jpg, logo.png and so on?

Unfortunately not. The good news is the bulky metadata editor plugin that was mentioned in here will create NFO files just by doing a 'save' without changing any data.

However, the photos seem to be quite problematic. It doesn't seem like anyone has a solution to save those. Only 'newly downloaded' images would be saved.

Another thought -- how is the 'people' data stored? If I update someone's photo, where on disk is that saved?

I believe those are saved in the metadata folders, unless you install a specific Emby plugin that allows you to save people photos elsewhere.

Where are the metadata folders, that's alongside the Emby install files?

I'm guessing those would be safe in the event of a DB corruption then? That was my main reason for turning on NFO and photos.
Would there be a situation a 'person' photo is ever updated on its own?

From your server dashboard -> view server info. That will show you some locations of things.
