Lleva unos días igual, un alto consumo de ram sin motivo, ni tareas programadas ni usuarios conectados y llega el punto en que rechaza las conexiones por colapso del sistema

Have you tried a reboot?  Another suggestion would be to turn off everything except for Emby in App Central, reboot, and see if the memory utilization is still high.  If so, providing the server log, per what @Lukesuggested above will help provide some needed context.
