I want to build some custom collections, notice that each collection generates an nfo file, however I don't see that the movies selected as part of said collection are saved in said nfo.
In the case of having to regenerate the database or migrate from 0. Where the data of movies that integrate the custom collections is stored, and by this I mean which movies make up said custom collection to be able to regenerate it

It is not saved in collection.nfo but Collection info is saved in each item.nfo under <set> NFO tag (which will enable preserving same data in case of library rebuild).

Excelent news.

This is relatively new, before this data was not added to the number of the movie in question.

Prerequisite is that you do save NFOs with your media (enable Metadata Savers>Nfo in library settings).

Yes and may have to refresh existing items to get their provider collection info, but that does not really apply to a custom collection.
