Metadata: Changes missing after upgrading Emby to a new version

I think I have a configuration problem somewhere, probably more on the Linux side than Emby I guess.
Emby 4.7.5.0 on Ubuntu 20.04.4 LTS, a LXC-Container on a Proxmox machine.
It runs smoothly in general, transcodings works, ssl certificate is installed, was able to mount my SMB V3 shares from my Synology NAS too.

But every time I "update" to a new version of emby with the "dpkg -i emby-server-deb_4.7.5.0_amd64.deb" command for example, I have lost some changes I made in the Metadata Manager for some of my Media files.

For example I have to manually identify National Lampoon's Christmas Vacation via its IMBD ID https://www.imdb.com/title/tt0097958/ to get the correct information and cover picture, because I do have the german version and it is stored on my NAS with its german title myfolders/on/myNAS/movies/Schoene Bescherung (1989)/Schoene Bescherung (1989).mkv 
And for some other media I uploaded custom cover pictures instead of the screengrab.
After I made these changes in the Metadata Manager I select the option at the bottom to "lock" this metadata and save.
The Librarys have the options enabled to store metadata information as .nfo and save pictures nearby the media file itself.

The issue only applies to something like 12, 13 or 14 files, so it is not a big deal and takes only a few minutes to correct it manually again.

Where do I make the mistake?
What additional information do you need?

Do you have any logs from the time of the update and this issue happens?

Okay, for the missing custom covers I do found something in another log file, seems to be the classic file permission issue.

For example:
2022-06-27 22:22:11.930 Error ProviderManager: UnauthorizedAccessException: Emby Server is being write access to /media/nasserien/serien/thunderbirds/poster.jpg

Do I mount the folder from the Synology NAS in a wrong way? I edited the fstab like this

//IP.of.my.nas/serien /media/nasserien cifs credentials=/home/jan/.smbcredentials,iocharset=utf8,vers=3.0,sec=ntlmssp  0  0

The .smbcredentials file just the two lines contains
username=smbusername
password=smbpasswort

And matches the synology DSM account that has read/write access to the shared foler /serien/ and SMBv3 is enabled also. And Streaming works also fine.

So far, it looks fine, now new errors in the logs.
